Any combination of salad is good for you including any combination of the following: beans, nuts, rice, macaroni, corn, peas, cucumber, celery, radish, shredded cabbage, sultanas, diced apple and orange, peppers, onions and mushrooms.
Mixed Pepper Salad
Ingredients
- 2 large green peppers
- 2 large red peppers
- 2-3 tbsp olive or sunflower oil
- 2 tbsp parsley, chopped
- 1 tbsp lemon juice
- Seasoning
Method
- Slice peppers thinly, making sure all of the seeds removed
- Mix oil with seasoning and toss sliced peppers in this
- Garnish with parsley just before serving.
Chick Pea Salad
Ingredients
- 8oz chick peas (soaked overnight if not from a tin)
- 1 sliced onion/spring onion
- Salt and pepper
- 2 hard boiled eggs (chopped)
- 1 yellow pepper (chopped)
- 1 tomato (chopped)
- Garnish with parsley as required
For the dressing
- 3 tbsp oil
- 1 clove garlic (crushed)
- 1/2 tsp sugar
- 1 tbsp lemon juice
- 1 tsp fried mustard
Method
- Soak the chick peas and cook until tender ( 1 1/2 hours) and drain
- If tinned chick peas are used, drain and cook until soft
- Mix all ingredients together
- Mix dressing ingredients together and place in a screw top jar; shake well
- Toss salad in dressing and garnish.
Beany Salad
Ingredients
- 4 tbsp oil
- 1 1/2 tbsp wine vinegar
- 1/2 tsp dry mustard
- 1/2 tsp sugar
- Salt and pepper
- 1 apple, diced
- 4oz beans of your choice, cooked
- 2 tbsp chopped fresh green herbs
- 2 sticks celery
- 1 green pepper
- 2 grated carrots (optional)
- 4 inch cucumber, diced and/or peeled
Method
- Place oil and vinegar, mustard, sugar, salt and pepper in a bowl and whisk
- Add tyne beans and the remainder of ingredients so that everything is well coated.
