Starters

Many of the most popular – the easiest – starters are suitable for this diet. Fruit juice and fruit (for example, 1/2 grapefruit, grapefruit and orange segment, melon and avocado pears) are, of course, ideal.

Fish dishes are also useful – prawn cocktail, smoked mackerel, soused herrings, mussels, etc. may all be served. If you serve any dressing with these, however, you must make sure that a suitable oil has been used.

Pate is always popular, but unfortunately may not be suitable if shop-bought or served in a restaurant. However, it is quite easy to make at home and can be used as a snack meal (in sandwiches or on crackers) as well as a starter.

Some simple ideas for starters are given below.

Chicken Pate

Ingredients

  • 8oz chicken livers
  • 8oz cooked chicken
  • 1 large onion
  • 3 eggs
  • 1tbsp oil
  • 1 clove garlic, crushed (optional)
  • 6 tbsp chicken stock or
  • 6 tbsp water and 1 chicken stock cube
  • Seasoning

Method

  1. Fry the chopped onion in oil until it starts to soften and add the chicken livers(these can be chopped or cut up with scissors)
  2. Cook for a further 5 minutes
  3. Mix all the other ingredients and liquidise to a smooth paste (if a chunky pate is required, break chicken into small pieces and do not liquidise)
  4. Place pate in a suitable dish and serve lightly chilled

 

Tuna Pate

Ingredients

  • 1 large tin of tuna
  • 2oz polyunsaturated margarine
  • 8oz cottage cheese
  • 1 clove garlic, crushed (optional)
  • 1 tbsp lemon juice

Method

  1. Skin fillets if necessary, add the fish to the other ingredients
  2. Stir until the mixture combines and chill in the fridge.

 

Liver Pate

Ingredients

  • 3/4 lb liver
  • 3 rashers lean bacon
  • 1 medium onion
  • 2oz polyunsaturated margarine
  • 1/2-1 clove garlic (optional)
  • Seasoning

Method

  1. Remove any fat from the bacon then chop up the liver and the bacon
  2. Slice the onion and fry this in half of the margarine along with the chopped garlic
  3. When the onion is softened, add the liver
  4. Fry until this is almost cooked, then add the beacon and cook lightly
  5. Switch the liquidiser onto medium speed, feed in the pieces of liver and bacon, then add all the other ingredients
  6. Press the paste into a dish and chill before serving.
