It is important to eat plenty of vegetables. Green vegetable, such as Broccoli, Kale, Green Beans etc. are a good source of essential fatty acids and vitamins.
Try and have a green or mixed salad each day with a French Dressing made with a suitable oil.
Potato French Style
Ingredients
- 2 lb potatoes
- 1 small onion
- 1/4 pint vegetable or chicken stock
- 1/4 pint skimmed milk
- 2oz polyunsaturated margarine
- Seasoning
Method
- Grease a shallow oven-proof dish, layer thinly sliced potatoes and onions with seasoning finishing off with a layer of potatoes
- Pour in the stock, milk and dot with margarine
- Cook in a moderate oven for 45 minutes (leek can be used instead of onion if preferred).
Savoury Cabbage
Ingredients
- 1 1/4 cabbage
- 1 clove garlic
- Pinch nutmeg
- 2 rashers bacon (chopped)
- 1 medium onion (chopped)
- 2oz polyunsaturated margarine
Method
- Heat margarine until melted
- Add all vegetables and bacon
- Cook gently for 20-30 minutes with lid on, shaking pan frequently.
French Bean Almondine
Ingredients
- 1lb cooked french beans
- 2oz polyunsaturated margarine
- 2oz chopped almonds
- Salt
- 2 tsp lemon juice
Method
- Saute the almonds in melted margarine for 2-3 minutes until lightly browned
- Stir in salt and lemon juice
- Mix into the hot beans.
